Good Old Fashioned Pancakes

Here is a recipe I found for pancakes that uses ingredients I always have on hand. I use powdered milk to save on our drinking milk. I also usually have some frozen fruit in our freezer, so it makes a good little breakfast or dinner that is quick, easy, and frugal!!

Good Old Fashioned Pancakes (I believe I found this at allrecipes.com)
INGREDIENTS 1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted


DIRECTIONS
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Thanks for your comment on my blog :) I love pancakes and make them for Saturday breakfasts often. I also like to serve them with a fruit-syrup!! Some of that raspberry syrup from the pork roast would probably be really good on pancakes! I couldn't believe how good it tasted just plain! Cutting the sugar really helped, I think - it's not so grossly sweet that you can't stand it, and it lets the raspberry flavor stand out.
